How to make Grilled Eggplant Salad with vegetables

 Eggplant salad grilled vegetable dishes that are suspected of Turkish cuisine can be prepared with eggplants, grilled or fried, here's how to prepare a dish of hearty, eggplant grilled vegetables and sauce pomegranate molasses or lemon juice .

Ingredients

  • 3 roasted eggplant
  • 2 chopped tomatoes
  • 2 cucumber slices
  • 1 onion chopped
  • 2 cloves garlic mashed
  • 2 pieces of chopped green pepper
  • 1 tsp chopped red hot pepper
  • ½Cup finely chopped parsley
  • 4 tbsp olive oil
  • ½Cup pomegranate molasses (or juice of 2 lemons)
  • Pinch of salt
  • ½Teaspoon cumin

Method of preparation

  1. Heat the oven to 220 C, put the eggplant in the oven tray and roast for 20-25 minutes until soft .
  2. Cut the vegetables i.e. tomatoes, cucumbers, green and red peppers, onions, put them in a bowl, then add the mashed garlic and parsley on top and stir until well mixed .
  3. We grilled eggplant and we cut then add it on top of the vegetables with the olive oil, pomegranate molasses, salt and cumin and stir until all safety components together perfectly .
  4. Put the salad in serving plates and garnish with parsley so it is ready to serve .
