Healthy quinoa salad, quinoa salad recipe is simple and easy as it is nutritious and rich in health benefits and suitable for vegetarians it consists of quinoa cooked with vegetable broth, black beans and corn with different spices .

Ingredients

  • 1 tablespoon olive oil + 2 tbsp extra
  • 3 chopped green onions
  • 3 cloves garlic
  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • 1 Can (12 oz) black beans strainer
  • 1 cup corn kernels
  • 2 tbsp chopped coriander
  • 2 tbsp fresh lemon juice
  • ½Teaspoon chili pepper

Method of preparation
