How to make a salad of boiled potatoes

 Boiled potato salad, a healthy and rich salad with many benefits you must try it is easy and composed of mashed potatoes, chickpeas and vegetables formed with pomegranate molasses sauce, garlic and onions and the wonderful flavor added by cumin.

Ingredients

To prepare the sauce:

  • 1 tablespoon pomegranate molasses
  • Pinch of salt, black pepper and cumin
  • 2 cloves garlic
  • To prepare salad:
  • 3 potatoes
  • 1 teaspoon cumin
  • 1 tablespoon chopped parsley
  • 1 tablespoon dried mint
  • Pinch of salt to taste
  • Olive oil
  • 1 onion sliced
  • 2 aubergines diced
  • 1 teaspoon tomato sauce
  • Pinch of cumin
  • 1 cup chickpeas
  • 1 chopped tomato

For decorating:

  • 1 cup pomegranate
  • Fresh mint leaves
  • Fresh parsley leaves

Method of preparation

  1. We boil the potatoes, mash them, then fry the eggplant cubes, boil the chickpeas and set aside the ingredients .
  2. Put in a bowl both potatoes, chopped parsley and mint with olive oil, salt and cumin and mix until well combined .
  3. Heat the olive oil in a medium pan, add the onion and garlic, stir a little, then add the eggplant cubes and tomato sauce with a pinch of salt, black pepper and cumin .
  4. Add to pan all of the chickpeas and pomegranate molasses and stir until ingredients are completely combined .
  5. Put the mashed potato mixture in the serving dish, pour the vegetable mixture over it and set aside the salad until it cools .
  6. Then put the tomatoes and decorate with pomegranate, mint leaves and parsley, so the salad is ready to serve .
