  • 2 ripe avocados, peeled, de-seeded and sliced
  • 2 ripe tomatoes, morgue
  • ½Cup olives, seedless, coarsely chopped
  • 1 cup canned chickpeas, drained, washed and drained again
  • 2 tbsp parsley leaves, coarsely chopped
  • ½Cup vinegar
  • ½Cup extra virgin olive oil
  • 1 teaspoon cumin
  • ½Teaspoon smoked paprika
  • Salt and freshly ground black pepper
  • 58 g blue corn tortilla chips

Method of preparation

  1. Gently, in a large bowl, movement, avocado, tomatoes, olives, chickpeas, parsley, vinegar, olive oil, cumin, red pepper, salt and pepper.
  2. Crumble over the corn tortilla mixture and serve
