Easy and healthy coconut and lemon salad

Coconut and lemon salad is a hearty and light appetizer dish from Thai cuisine famous for its delicious cuisine, coconut salad with rice, onion, cucumber, lettuce, tomatoes, mint and ginger with lemongrass, simple ingredients to make a rich dish that accompanies all your meals.

  • 1 and a half cups of rice
  • 1 lemongrass chopsticks, trimmed, cut
  • 165ml coconut milk
  • Half a small red onion, divided in half, thinly sliced
  • 1 cucumber, divided in half, thinly sliced
  • 1 cup of beans, trimmed
  • 1 cup of fresh mint leaves, chopped
  • 1 small green lettuce, leaves separated, chopped
  • 200 g small tomatoes, divided into halves
  • ½Cup lemon juice
  • 1 tablespoon soy sauce
  • 2cm piece of fresh ginger, peeled and finely chopped

Method of preparation

  1. Place ground, lemongrass, coconut milk and 2½ cups of cold water in a pan over medium - high heat،
  2. Stir to mix, cover, bring to a boil, then reduce the heat to a simmer, boil for 10-12 minutes or until the liquid has evaporated and the rice is soft،
  3. Sprinkle with salt and pepper, leave them aside for 5 minutes, remove the lid, stir them with a fork until the grains separate, remove the lemongrass and discard, and refrigerate for 5 minutes.
  4. Put the onions, cucumbers, beans, mint, coriander, lettuce and tomatoes in a large bowl, add the cooked rice, stir gently to mix
  5. Mix the lemon juice, soy sauce and ginger in a small jug, sprinkle them over the salad, gently stir to homogeneity, serve.
