Healthy quinoa salad for diet

Healthy quinoa salad is a beautiful and nutritious gesture, distinguished among salad dishes, a dish made of apples, quinoa, mustard, walnuts, berries, and grated cheese, served hot or cold.

  • 1 and a half cups of chicken stock
  • 1 cup of quinoa, rinsed
  • Sauce ingredients
  • 3 tbsp olive oil
  • 1 and a half tablespoons of mustard
  • 1 teaspoon maple syrup
  • Quarter teaspoon ground cinnamon
  • Salt and black pepper
  • 1 large apple, chopped into little pieces
  • 1 cup of walnuts, chopped
  • Half a glass of dried berries
  • Half a glass of Parmesan cheese, grated

Method of preparation

  1. Stir the quinoa and chicken stock in a pan, bring to a boil, then reduce the heat to low and cook until the stock is absorbed, for about 10 minutes, remove the pan from the heat and stir with a fork to infuse.
  2. Mix olive oil, mustard, maple syrup, sprinkle with salt and pepper, then pour the sauce over the quinoa, stir with the apple pieces, walnuts, berries, and cheese.
  3. Return them to the pan and let the mixture simmer until the sauce warms up and the apples become slightly tender for about 5-10 minutes.
  4. If you want the salad to be cold, prepare it the same way but do not add the sauce, berries, apples, and walnuts until the quinoa cools, then mix all together in a bowl and freeze for at least 30 minutes.
