The crispy, light, Asian noodle salad is made up of cucumber, carrot and bean sprouts and can be added to this side dish, making it a nutritious main meal at lunch .

Ingredients

  • 12 oz Asian noodles
  • Sprinkle 2 carrots
  • Sprinkle with 2 cucumber seeds
  • 4 chopped green onions
  • 1 ½ cup fresh bean sprouts
  • ½Cup chopped coriander
  • ½Cup fish sauce
  • ½Cup vinegar
  • 3 tbsp sugar
  • 2 cloves garlic
  • ½Teaspoon red hot pepper
  • Lemon

Method of preparation

  1. Boil the noodles in a bowl with boiling water and stir for 3-4 minutes, then put them under cold water and drain well . Put the noodles in a large bowl, add the carrots, cucumbers, bean sprouts and coriander and stir well .
  2. In another bowl mix both the fish sauce, vinegar, sugar, garlic and red pepper, pour ½ the amount of sauce over the noodles and stir until all the ingredients are well mixed . You can put more sauce or coriander and add the green onions and lemon juice so the salad is ready to put in a serving dish .
