Ingredients

  • 1/2 cup light quinoa
  • 4 small arugula
  • A can of beetroot
  • Sauce:
  • 5 tablespoons olive oil
  • Large spoon honey
  • 5 tablespoons lemon juice
  • 2 tbsp balsamic
  • 3 tablespoons pomegranate molasses
  • 4 cloves garlic

Method of preparation

  1. In a bowl on the fire we put the washed quinoa and add water to it.
  2. Leave on fire only ten minutes and then lift .
  3. Drain the water well and leave to cool.
  4. Finely chop the arugula.
  5. Cut the beetroot into soft pieces.
  6. In the serving bowl put the quinoa, arugula and beetroot together and stir.
  7. In another small bowl, mix the sauce ingredients together .
  8. Add the sauce to the quinoa mixture and serve healthy and well.
