Ingredients

  • To prepare salad:
  • 1 small cut cauliflower head
  • 4 cups chopped lettuce
  • 1 cup cherry tomatoes, cut in halves
  • ½Cup red onion, sliced
  • 2 boiled eggs
  • 1 tablespoon lemon juice
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • ½Teaspoon chopped fresh parsley
  • To prepare the sauce:
  • 3 cloves garlic
  • 1 cup fresh basil
  • 1 cup sun-dried tomatoes olive oil
  • 2 tbsp olive oil
  • ½Cup Parmesan cheese

Method of preparation

  1. We fill a large cooking pot with water and boil cauliflower with boiling water for 6-8 minutes . Halve the flower and set aside for 5 minutes until cool . Add to blender food all the components of the tomato sauce and put it on medium speed for a minute or two .
  2. Put the boiled cauliflower in a bowl, add 3 tablespoons of sauce and stir until the ingredients are well combined . In another bowl we put lettuce, cherry tomatoes, red onions, boiled eggs and stir . We bring another bowl, mix in it lemon juice and olive oil, add salt and pepper and stir the ingredients well . Taste the mixture and increase the seasoning to taste .
  3. Pour the mixture over the salad, stir and then add the cauliflower . Put the salad in a serving dish and decorate with fresh parsley leaves
