How to make sweet corn and bean salad

Sweet corn salad is a delicious dish that combines an excellent and perfect blend of legumes, leeks, tomatoes, bell peppers, and basil.

  • 400g corn
  • 2 cups of beans, cooked
  • 4 shallots, mashed
  • 3 tomatoes, ripe
  • 1 red sweet pepper, divided into small cubes
  • 3 tbsp red vinegar
  • 1 tablespoon of coarse salt
  • A quarter teaspoon of black pepper
  • 2 tbsp coriander, chopped
  • Corn husk

Method of preparation

  1. In a shallow oven tray, arrange each cob on its larger end, hold the pointed end with a hand and, using a sharp knife, scrape the corn kernels, transfer them to a bowl.
  2. In a large frying pan, heat 2 tbsp olive oil, chickpeas and corn kernels until soft, for 5-6 minutes.
  3. Give love to the pot and add the beans, leeks, tomatoes, and red peppers
  4. In a small bowl, mix the vinegar, salt, pepper and remaining 2 tablespoons of oil.
  5. Pour them over the corn mixture, add coriander, or basil and mix well.
  6. Add spices to marinate before serving
