Method of action of dry cowpea salad

Dry cowpea salad this recipe is famous and very useful because the legumes have many benefits, but the methods of preparation of it vary from country to country, and in the Laban is prepared from black dried cowpea beans, carrot slices, chopped celery, parsley, mint and various spices and variety.

Ingredients for preparing dry cowpea salad:

  • – 1 1/2 cup dried lupine beans, soak for all hours of the night
  • – 1/3 cup chopped celery with leaves
  • – 1/2 and a half cup sliced carrots
  • - 3/4 cup chopped onion
  • – 1/8 cup fresh mint and chopped

- For decoration – :

  • – 1/4 cup olive oil
  • – 2 oranges, squeezed
  • – 1/2 lemon, squeezed
  • – 1 clove of garlic, mashed
  • – 1/2 teaspoon coriander powder
  • – 1/2 teaspoon salt
  • – 1/8 teaspoon black pepper powder
  • – 1 teaspoon brown sugar

How to prepare dry cowpea salad:

  1. Place in a deep bowl the beans and cover with water about 2.52 cm (be soaked overnight and then boil with water))
  2. Boil the beans slowly over low heat, leave them to become soft but do not make them mashed for 35 minutes.
  3. Then set aside after cooking.
  4. When the grains have cooled, put them in a large bowl.
  5. Then add celery, carrots, parsley, white onions, mint and mix quickly.
  6.  To decorate the salad put in a small bowl: olive oil, orange, lemon juice, garlic, coriander, MMM, pepper and brown sugar mix and let stand for 6 seconds.
  7. Transfer the pot and put on the gas, boil over low heat for 5 minutes .
  8. Turn off the fire, refrigerate and decorate with the prepared cereal salad. Then leave the ingredients all soaked for 1 hour before serving .
