Method of action of Turkish cold baklava

Cold baklava is a popular dessert in Turkey, which is a baklava with pistachio or walnut filling and a sauce of Shira and milk, decorated with cocoa and milk powder and served cold .

  • Preparation time: 30 minutes
  • Cooking time: 1 hour 10 minutes
  • Total time: 1 hour 40 minutes


  • 1 Envelope baklava dough
  • 150 g butter
  • ½Cup oil
  • For watering baklava:
  • 2 cups sugar
  • 1 cup water
  • 2 cups milk
  • To prepare the filling:
  • Pistachio or coarsely chopped walnuts
  • For decorating:
  • 2 tbsp cocoa
  • 1 tablespoon milk powder

Method of preparation

  1. Bring the Shira, put the sugar and water in a bowl, stir and when it boils leave it 5 minutes on the fire and then set aside .
  2. Spread the butter over low heat, turn off the fire, add the oil and stir well .
  3. Grease the baklava tray with melted butter and then begin to lay out the baklava dough layers, each with oil and butter mixture.
  4. Put the filling and then reapply layers of dough with butter and then put the last layer and grease it well .
  5. Cut the baklava and then put it in the oven at 170 degrees until it acquires a golden color from the bottom and top i.e. for about an hour depending on the type of oven .
  6. After the Shira has cooled we add milk and stir well .
  7. We take out the baklava and leave it aside for about ten minutes then pour over the Shira and milk mixture and let rest an hour .
  8. Mix milk powder, cocoa ones over the baklava and then put it in the fridge until completely cooled and its corruption to taste and serve .
