Tabbouleh with couscous and meat is a Moroccan dish

  • 1 cup chicken stock
  • 1 cup couscous
  • 1 tablespoon olive oil
  • ½Cup raisins
  • 300 g beef fillet
  • 1 chopped Lebanese cucumber
  • ½Cup chopped fresh mint
  • ½Cup chopped fresh parsley
  • ½Cup roasted pine nuts
  • 450 g can of chickpeas washed and dried
  • 3 boiled and chopped eggs
  • And to prepare the sauce:
  • ½Cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil

Method of preparation

  1. Make a sauce:
  2. Stir in a bowl (plain yogurt, olive oil, lemon juice), then add 1 tablespoon of cold water, stir until a dense mixture, add more water if needed.
  3. Season with salt and pepper, then set aside.
  4. Boil the broth in a bowl over high heat.
  5. Put the couscous in a large bowl.
  6. Add over the couscous 1 teaspoon of oil, raisins and broth, cover the bowl and leave for 3-4 minutes or to evaporate the liquid, stir with a fork mash.
  7. Heat in a large frying pan the remaining oil, cook in it for 5-6 minutes or until ripe, remove from heat, cover and set aside for 10 minutes.
  8. In the meantime, add the above couscous cucumber, mint, and parsley as well as pine nuts, chickpeas and eggs.
  9. Add to the couscous mixture the meat slices, taste and adjust the seasoning, sprinkle with the garnish sauce, and then serve directly with your chosen dishes.
